Our first recipe comes to us from one of the most famous Roman Runner chefs, Mark Calhoun.  Watch out though - Mark likes it hot!

Mexican Lasagna

1# 90% Lean Ground Beef.
1 16oz Refried Beans
3 c Salsa
2 1/2 c Water
9 Lasagna Noodles Uncooked
1/2 c Sour Cream
1/2 c Diced Tomato
1/4 c Sliced Green Onion
1 c Shreaded Cheese
1 c Shreaded Lettuce

PREHEAT OVEN TO 350.OIL A 9X13 PAN. MIX BEEF, BEANS & 1 C SALSA. PLACE 3 NOODLES IN PAN AND COVER WITH 1/3 BEEF MIX. REPEAT 2 MORE TIMES. MIX REMAINING SALSA WITH WATER AND POUR OVER DISH. COVER WITH FOIL AND BAKE 1 1/2 HOUR REMOVE COVER AND COVER WITH CHEESE, BAKE 5 MIN. REMOVE FROM OVEN AND COVER WITH SOUR CREAM, TOMS, ONION AND LETTUCE.
